Descripción del programa

Hotels and resorts sit at the centre of the visitor economy, and the visitor economy is growing again. UN Tourism estimates that about 1.52 billion international tourist arrivals were recorded in 2025, roughly 4% more than in 2024, with international tourism receipts of around USD 1.9 trillion. Africa grew fastest at about 8%, and the Middle East was some 39% above its 2019 level.

That growth only turns into jobs, tax revenue and repeat visitors when properties are run well. Owners, operators, ministries of tourism and hotel schools face the same practical questions: how to staff and train a team, set and defend room rates, keep food safe, maintain the building and plant, and deliver a consistent guest experience at a cost the business can sustain.

Development finance is now backing this work directly. In The Gambia, the World Bank’s IDA-funded Tourism Diversification and Resilience Project (P177179, a USD 68 million grant) supports the policy framework, tourism small businesses and resilient coastal sites. In Uganda, a World Bank-financed project is funding the Uganda Hotel and Tourism Training Institute in Jinja, partly so that more senior hotel roles can be filled by nationals. IFC continues to finance new and refurbished hotels in Ghana, Ethiopia and elsewhere, each creating hundreds of jobs that need trained managers.

This Hotel & Hospitality Management Training in Las Vegas brings these questions to one of the largest hotel markets in the world. Las Vegas had a weighted inventory of about 150,600 hotel rooms at the end of 2024 and average occupancy of 83.6%, according to the Las Vegas Convention and Visitors Authority (LVCVA). Its 2025 downturn, with visitor numbers down 7.5%, also makes it a live case in revenue protection and cost control.

Over five days participants work through hotel operations, people management, revenue and distribution, food and beverage with food safety, engineering and maintenance, and the governance that ties them together. A technical visit to hotel and resort operations, confirmed with host organisations, links each session to real practice.

The Growing Importance of Hotel & Hospitality Management

Tourism recovery has been uneven. UN Tourism reports that Europe and the Middle East are well above 2019 levels, while Asia and the Pacific were still about 9% below in 2025. Growth markets in Africa and the Middle East are adding rooms quickly, and new properties need managers before they open.

Financiers are also asking more of the hotels they fund. IFC investments such as the Hampton by Hilton at Accra airport (about 990 direct and indirect jobs) and its USD 80 million loan to MIDROC Ethiopia for Sheraton properties in Addis Ababa (over 9,400 jobs expected) depend on operators meeting brand, labour and environmental standards. Public projects, such as Uganda’s investment in its national hotel institute, show governments treating hotel skills as part of their jobs agenda.

Food safety rules have moved too. The Codex General Principles of Food Hygiene (CXC 1-1969) were revised in 2020, bringing HACCP into the main text and adding food safety culture as a management responsibility. ISO 22000:2018 remains the reference standard for food safety management, with a 2024 climate amendment and a new edition in preparation.

Las organizaciones necesitan cada vez más profesionales capaces de:

  • Building a departmental structure that matches the property’s size and market
  • Setting service standards and checking them through inspections and audits
  • Planning rosters around forecast occupancy and events
  • Forecasting demand and setting room rates by segment and season
  • Managing online travel agencies, direct booking and channel costs
  • Costing menus and controlling food and beverage margins
  • Running a HACCP-based food safety system with records that stand up to inspection
  • Planning preventive maintenance and capital replacement
  • Reducing energy, water and waste costs
  • Preparing monthly management accounts and variance reports
  • Reporting to owners, lenders and tourism authorities
  • Training and developing local supervisors into managers

Strong hotel and hospitality systems help organisations:

  • Raise occupancy and average daily rate without discounting away margin
  • Keep payroll in line with demand
  • Protect guests and the brand from food safety incidents
  • Extend the life of buildings and equipment
  • Improve guest review scores and repeat business
  • Meet the reporting conditions of lenders and investors
  • Give hotel schools and ministries a clear picture of skills needed
  • Respond quickly when demand falls, as Las Vegas did in 2025
  • Open new properties on time and to standard

For ministries and tourism boards, well-run hotels are also the evidence base for national tourism strategies: they generate the occupancy, rate and employment data that policy depends on.

Contenido completo día a día

First Day | Hospitality Industry and Hotel Organisation

  • Origins and development of the hotel and hospitality industry
  • Global tourism trends and recovery: UN Tourism 2025 data
  • Hotel types: resort, city, conference, boutique and integrated resorts
  • Ownership models: owner-operated, management agreement, franchise and lease
  • Organisation of the hotel workplace and departmental roles
  • Front office operations, check-in to check-out
  • Service standards and how to write them
  • Guest journey mapping and moments that matter
  • Las Vegas as a high-volume benchmark: rooms, occupancy and visitors

Workshop: Mapping the Guest Journey

Teams map the guest journey for a property type of their choice, from booking to departure. They mark each point where a standard is needed, assign the responsible department and identify where hand-offs fail. The groups then compare their maps with the volume and occupancy pressures of a large Las Vegas resort and agree three standards to write first.

Second Day | People, Rosters and Hotel Leadership

  • Staff management in hotels: structure, spans of control and job descriptions
  • Workforce planning against forecast occupancy
  • Monitoring workloads and procedures: work charts and productivity
  • Housekeeping management: room attendant workloads and inspections
  • Labour cost as a share of revenue and how to control it
  • Recruitment, onboarding and service training
  • Developing local supervisors into managers
  • Leadership styles and daily briefings
  • Building a support network across departments

Workshop: Building a Demand-Led Roster

Using a two-week occupancy forecast, participants build rosters for front office and housekeeping, calculate labour cost per occupied room and test what happens when forecast occupancy falls by ten points. They then propose a cross-training plan that keeps service levels without overtime, and present the trade-offs to a mock general manager.

Third Day | Revenue, Sales and Distribution Management

  • Key performance indicators: occupancy, ADR and RevPAR
  • Demand forecasting and segmentation
  • Pricing strategy by season, day of week and event
  • Distribution channels: direct, online travel agencies and wholesalers
  • Channel cost and net revenue
  • Group, meetings and convention business
  • Marketing and sales planning in hospitality
  • Online reputation and review management
  • Lessons from Las Vegas: occupancy fell from 83.6% in 2024 to 80.3% in 2025

Case Study: Protecting Revenue in a Downturn

Participants analyse LVCVA figures showing visitor numbers down 7.5% and average daily rate down about 5% in 2025. They decide which segments to target, where to hold rate and where to use packages, and calculate the effect on RevPAR. Each team presents a three-month revenue plan with the indicators they would report to owners.

Fourth Day | Food, Beverage, Food Safety and Engineering

  • Menu planning, food preparation and recipe costing
  • Purchasing, receiving and storage controls
  • Alcoholic beverage management and responsible service
  • Restaurant, room service and banquet operations
  • Food sanitation: Codex General Principles of Food Hygiene (2020 revision)
  • HACCP principles, critical control points and records
  • ISO 22000:2018 food safety management and the 2024 climate amendment
  • Food safety culture as a management duty
  • Engineering and maintenance of hotels: preventive planning and energy and water use

Workshop: HACCP Plan for a Banquet Kitchen

Teams prepare a HACCP plan for a 300-cover banquet: they identify hazards, set critical control points and limits, design monitoring records and corrective actions, and agree how verification will be done. They then link the plan to purchasing and storage controls and to a preventive maintenance schedule for refrigeration equipment.

Fifth Day | Hotel Performance, Governance and Visits

  • Reading the hotel profit and loss statement
  • Budgets, forecasts and monthly variance analysis
  • Owner and operator reporting and management agreements
  • Health, safety, security and crisis readiness
  • Sustainability reporting expected by lenders such as IFC
  • Linking hotels to national tourism strategies and hotel schools
  • Technical visit to hotel and resort operations
  • Debrief: practices observed and what can be transferred
  • Personal and institutional 90-day action plans

Capstone Exercise: Integrated Hotel Improvement Plan

Drawing on the week and the technical visit, each team prepares an improvement plan for a real or model property, or for a tourism ministry or hotel school. The plan sets priorities across service, people, revenue, food safety and maintenance, gives indicators and owners for each action, and is presented to a panel for challenge and feedback.

Hotel & Hospitality Management Training Methodology

The programme is practical. Short inputs from the facilitator are followed straight away by exercises using real hotel data, case studies and the technical visit.

El programa combina:

Pertinencia y aplicación regionales

África

Africa recorded around 81 million international arrivals in 2025, the fastest growth of any region according to UN Tourism. Projects such as The Gambia’s Tourism Diversification and Resilience Project and Uganda’s investment in its hotel and tourism institute, together with IFC-backed hotels in Accra and Addis Ababa, all depend on trained hotel managers.

Oriente Medio

The Middle East received nearly 100 million international visitors in 2025, some 39% above 2019. New resort and city hotel pipelines need managers who can open properties and run them to international standards.

Asia

Asia and the Pacific received about 331 million arrivals in 2025 but remained below 2019 levels. Hotels there are focused on rebuilding demand, managing rates carefully and controlling costs.

Europa

Europe received about 793 million arrivals in 2025 and remains the largest region. Its hotels face labour shortages and rising energy costs, which makes rostering and engineering skills a priority.

América Latina

The Americas grew by about 1% in 2025. Hotels in Latin America and the Caribbean compete on service quality and value, which places emphasis on standards and revenue management.

Across all regions, the same disciplines apply: clear standards, sound people management, informed pricing and safe food.

Host Country Profile – US

Las Vegas, Nevada, is one of the world’s largest hotel and convention destinations. The LVCVA estimated 41.7 million visitors in 2024 and about 6 million convention attendees, with a weighted inventory of about 150,600 rooms. Harry Reid International Airport handled about 58.4 million passengers that year.

The city is a benchmark because of scale and data. A study by Applied Analysis for the LVCVA put visitor spending at USD 55.1 billion in 2024, with tourism supporting about 385,000 jobs in total. In 2025 visitor numbers fell to about 38.5 million, occupancy to 80.3% and average daily rate to about USD 184, so participants can study both peak performance and the response to a downturn.

Most international participants travel on a US visitor visa or, if eligible, with an approved ESTA travel authorisation. Interview waiting times differ by embassy, so we recommend applying early. Risalat provides invitation letters and visa advisory support, and Las Vegas has direct international flights as well as many domestic connections.
